Several pairs of latex gloves.

8 pounds of pig feet.
Plenty of water to boil them in a large pot.

2 diced onions (frozen will do also)

Garlic Paste - 4/5 tablespoons

2 cans large tomatoess and crush them by hand

1 cup of raisins

1 cup of sliced green olives

2 containers of red pimientos

2 green peppers, sliced or diced

1 pound chick peas either canned or dried (very soft and skin removed)

1/2 pound diced potatoes.

Cumin, oregano to taste

1/2 container of Sofrito

1 cup 100% virgin olive oil

1 cup of white white or red/sweet Vermouth

Salt

PROCEDURE

Boil the pig feet until very tender. Let cool. Wear the gloves and digging remove all the bones. Transfer the boneless to another pot or slow cooker. Add the rest of the ingredients and the chick peas drained. Cook until all the flavors are blended.
